    First, make the dressing by mixing the mustard, soy, honey and lemon juice in a small bowl until combined. Season to taste.

    Add the defrosted peas, chopped radishes, mint and watercress or rocket to a large bowl and add half the dressing. Toss together and season.

    Heat a nonstick frying pan over a medium heat and add the pork chops. Fry on each side for 3-4 minutes until golden and caramelised. Once cooked, add the remaining dressing, turn off the heat and toss the chops in the dressing to make sure they are well coated. Leave to rest for 5 minutes while you assemble the salad on a platter.

    Serve the chops on top of the salad and drizzle over any resting juices from the pan.
