    Heat a griddle pan and drizzle with a little oil, season the steak with the sea salt and place in the pan on the fat edge to render then cook on both sides for approximately 4 minutes along with the bashed garlic and thyme.

    Towards the end of the cooking add the butter and baste the steaks with a spoon before removing. Allow the steaks to rest for 5 minutes before serving. Remember to cover and keep warm when resting.
