    Put the horseradish and yoghurt or crème fraiche into a bowl and add seasoning.

    Squeeze in the lemon juice and mix thoroughly.

    Add the chopped chives (if using) and mix again.

    Taste the sauce; if it is too hot add more yoghurt or more horseradish if you want it hotter.
