    Preheat the oven to 220°C fan/200°C. Peel the potatoes and chop into halves or quarters if large so they are all roughly the same size. Add to a large pot of salted cold water. Bring to the boil then simmer for 5 minutes. Drain and return the potatoes to the pan. Sprinkle over the plain flour, put a lid on and briefly shake the pan a couple of times so the edges of the potatoes are roughed up. Leave to steam dry in the pan for 5 minutes.

    Meanwhile add the sunflower oil to a shallow roasting tray and heat in the oven until very hot (about 5 minutes).

    Very carefully, tip the potatoes into the hot oil and use two spoons to turn over each potato in the oil so they are completed coated. Return to the oven and roast undisturbed for 25-30 minutes until they are nicely golden.

    After 25-30 minutes, turn the potatoes over and roast for a further 25-30 minutes.

    For the final few minutes of roasting, sprinkle over the za’atar and return the potatoes to the oven.

    Serve in a large bowl with a generous sprinkling of sea salt flakes.
