    Preheat the oven to 200°C/180°C fan. Using one carrot at a time, lay it between the handles of two wooden spoons (to stop you cutting all the way through), then make cuts along the length of the carrot about 5mm apart.

    Place on a lined baking tray, cut side up, drizzle over the oil, sprinkle over the sea salt flakes and black pepper, and roast for 30 minutes until cooked through and slightly caramelised, turning halfway through.

    Meanwhile, fry the pancetta slices in a small, dry nonstick frying pan over a medium heat for about 7-8 minutes until the fat has been rendered and the pieces are golden and crispy. Remove the pancetta slices to a chopping board, leaving the fat behind in the pan and blot off any excess oil with kitchen roll. Chop the pancetta slices into very small pieces.

    Return the pan to a medium heat and add the panko and garlic. Stirring until the panko is golden and crispy. Add the finely chopped sage for the last few minutes of frying then return the pancetta pieces to the pan, fry briefly for one minute until everything is well mixed then set aside.

    Mix the honey, red chilli and orange zest and juice in a small bowl and pour over the carrots once they have had 30 minutes roasting. Make sure they are well-coated in the glaze then return to the oven for the final 5 minutes of roasting.

    Once the carrots are nicely glazed in the hot honey mixture, serve on a plate with any juices from the tray and sprinkle over the crispy breadcrumb mixture.
