    Preheat the air fryer to 200°C. Put the potatoes in the basket, pour over 1 tbsp olive oil, toss well so they are coated in the oil and air fry for 25-30 minutes until golden and crispy.

    Meanwhile, place the crushed cornflakes in a large bowl and stir through the garlic granules. Dust the pork steaks in the flour, tapping off the excess, then dip into the beaten egg so they are coated on both sides before placing in the cornflake mixture, turning them over a few times and pressing the cornflakes into the meat so the schnitzels are evenly coated.

    Add the radishes to the air fryer with the potatoes for the final five minutes of cooking before tipping everything into a large bowl. Turn the air fryer down to 180°C. Cook the schnitzels for 15 minutes, turning them halfway through until golden and crispy on both sides.

    Meanwhile, make the salad dressing by mixing the remaining 2 tbsps olive oil with the cider vinegar, mustard and honey. Pour this over the potatoes, add the radishes, chopped dill and rocket leaves and stir well so everything is well coated in the dressing. Season to taste.

    Serve the schnitzels with the potato salad on the side and extra lemon wedges.
