Air Fryer Spiced Lamb Chops with Bombay Potatoes and Coriander Mango Yoghurt

    Put the lamb chops on a plate and rub the curry paste all over the meat. Set aside to marinade for 30 minutes while you cook the potatoes.

    Preheat the air fryer to 200°C. Put the potatoes in a large bowl, add the olive oil, spices and ½ tbsp sea salt flakes and toss together so they are well coated in the spices and oil. Add to the air fryer and air fry for 30-35 minutes until crispy and golden and set aside.

    Increase the air fryer temperature to 220°C and add the lamb chops, sprinkle over the remaining ½ tbsp sea salt flakes and air fry on each side for 4-5 minutes for pink meat. Wrap in foil and leave to rest for a few minutes before serving.

    Put the yoghurt in a small bowl, stir through the coriander and top with the mango chutney.

    Serve the lamb chops with the potatoes and yoghurt on the side. Garnish with the almonds, sliced chilli and pomegranates if using, extra coriander leaves and lime wedges on the side.
