Cooking Method

For the Chickpea Stew:

    Heat a heavy based pan, add the oil and fry the onions and garlic until soft, being careful not to burn the onions and garlic.

    Add the spices and cook for a further minute.

    Add the tomato puree and cook for another minute.
  • 4
    Add the chopped tomatoes, butternut squash, chickpeas, pepper and sugar and gently simmer for 20 minutes until the squash is tender.

    After 20 minutes of simmering, add the spinach and parsley and season to taste.
