Cooking Method

    Put a frying pan over a medium heat with the oil and a knob of unsalted butter and cook the onion gently with a pinch of salt to soften and begin to brown, 4-6 minutes.

    Add the meat and chorizo, if using, and turn up the heat a little, toss the meat and onion together while it tinges brown.

    Next add the potato, if its mash, add the greens at the same time, it its firmer shapes let it brown a little before adding the greens.

    Add some black pepper, stir a little then pat roughly together or shake the pan in a circular motion so that the bubble and squeak assumes a roundish cake shape.

    Flip the contents over onto the other side, the safe way to do it is to tip it onto a baking sheet then invert top-side-down back into the pan for the last 8-10 minutes.

    Heat up the gravy and drizzle a little over the pan.

    In a separate pan fry or poach the eggs to your liking.
