Crispy Scotch Beef and Brussel Sprout Stir Fry with Sesame, Chilli and Lime

    Heat 1tbsp sesame oil over a high heat in a large wok or frying pan. Add the beef mince, breaking it up with a wooden spoon and fry until golden brown and crispy. Remove to a plate with kitchen paper.

    Turn the heat to medium, add the other 1 tbsp sesame oil, the sliced white spring onions and brussel sprouts. Stir for a few minutes until the sprouts are slightly charred and then add the ginger and garlic.

    Mix together the soy sauce, sweet chilli sauce, lime zest and juice then pour into the pan with the beef.

    Add the cooked noodles and a splash of the noodle cooking water. Toss together for a couple of minutes until the noodles are well coated.

    Serve in bowls and top with the sliced green spring onions and some red chilli, toasted sesame seeds and coriander if desired.
