    Toast the cumin seeds in a dry frying pan over a medium heat for 3-4 minutes until they start to smell fragrant. Grind to a fine powder in a pestle and mortar.

    Add everything except the salt to a small blender or mini chopper and pulse until you have a thick, rough textured puree. You may need to add a splash of water or extra oil to help reach the correct consistency.

    Season to taste then use as a marinade for any cut of Specially Selected Pork, Scotch Lamb or Scotch Beef of your choice. Simply massage the marinade into the meat and leave at room temperature for 30 minutes, or at least two hours in the fridge (ideally overnight) before grilling. Alternatively, the mojo verde can be used as a dipping sauce or dressing for any grilled meats.
