Pork, Caramelised Onion and Goats Cheese Air Fryer Tartlets

    Heat the olive oil in a large frying pan over a medium heat and add the sliced onions. Fry for 10-15 minutes until very, very soft, adding a splash of water if they start to catch, stirring occasionally.

    Once the onions are very soft, lower the heat and add the sugar, balsamic vinegar and thyme. Fry for 5 more minutes until the onions are caramelised. Tip onto a plate and leave to cool.

    Meanwhile, mix the creme fraiche, lemon zest and juice in a bowl. Mix well and season to taste.

    Unroll the sheet of puff pastry and cut into quarters. Lightly score a 2cm border around each quarter. Preheat the air fryer to 180°C.

    Spread the creme fraiche mixture over each tartlet before topping with the caramelised onions, crumbled sausage meat and goats cheese. Sprinkle over a few extra thyme leaves and top with freshly ground black pepper. Brush the beaten egg around each exposed border.

    Put a sheet of baking parchment in the bottom of your air fryer so you can easily lift the tartlets in and out and bake for 30-35 minutes until the pastry is golden. You can place two tartlets on the bottom of your air fryer and the other two on the basket above, switching them halfway through so you get an even bake.

    Top with rocket leaves and serve.
