Hot Honey Air Fryer Scotch Lamb Chops with Whipped Feta and Bulgur Salad

    Put the rinsed bulgur wheat in a medium saucepan and pour over the chicken stock. Bring to the boil then simmer until the bulgur wheat is cooked, about 8-10 minutes. Drain and return to the pan.

    Make the whipped feta by whizzing the feta, yoghurt, zest and juice of half the lemon and a generous grinding of black pepper in a small food processor until smooth.

    Massage the olive oil into the lamb chops with a little salt and pepper. Preheat the air fryer to 180°C and add the chops. Air fry for 7-8 minutes for pink meat, turning over halfway through. Rest on a plate covered with foil while you finish the bulgur wheat and make the hot honey.

    Fluff up the bulgur wheat with a fork and add the smoked paprika, tomatoes, spring onions, herbs and red pepper. Stir well then add the zest and juice of the remaining lemon half. Taste and season.

    Make the hot honey by adding the honey, chilli flakes and vinegar to a small sauce pan. Simmer until thickened slightly then brush over the lamb chops.

    Serve a spoonful of the bulgur with a dollop of the whipped feta, top with the lamb chops and drizzle over the rest of the hot honey.
