    Heat 1 tbsp oil in a large pan over a medium high heat. Brown the lamb chunks on all sides and then tip into the slow cooker. Be sure not to overcrowd the pan, rather cook it in batches.

    In the same pan, heat the remaining oil. Add in the onions and cook until soft, then add garlic, ginger, curry powder and tomato puree and cook for another minute or so

    Add the onion-spice mix to the slow cooker along with the chopped tomatoes, lentils, and stock. Stir well. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until lamb is tender and lentils are fully cooked.

    Stir in the lemon juice, cornflour and add salt and pepper to taste
