    Heat the oil in a large pan and cook the leek, carrots, celery and turnip for 5 – 10 minutes until starting to soften. Add the soup mix, lamb and stock.

    Bring to the boil, cover and simmer gently for 40 – 45 minutes until all the vegetables and pulses are tender. Ladle into bowls, sprinkle with parsley and serve.
