    Mix all the ingredients for the marinade into a large bowl or ceramic dish and set aside.

    Lightly pound the pork steaks with a mallet or meat tenderiser* and allow to marinade for at least 2 hours or best overnight.

    Prepare the vegetables for the pickle and place in a bowl. Add the sugar, rice wine vinegar and salt and stir well. Set aside for at least 30 minutes.

    Heat a griddle pan over a high heat. Discard any excess marinade from the steaks and fry until nicely charred on both sides until the pork is cooked through.

    Remove the pork from the grill and leave to rest for a few minutes covered in foil. Meanwhile spread the mayonnaise on the baguette and add the cucumber strips. Cut the pork into strips and place on top of the cucumber. Top with the pickled veg, shredded spring onions and mint and coriander leaves. Cut the baguette into halves and serve immediately.

    *TIP: If you don’t have a mallet or meat tenderiser, use a rolling pin or ladle to flatten the steaks.
