Cooking Method

  • 1
Add the fresh breadcrumbs to a large bowl and pour over the milk. Leave to soak for a few minutes before adding the pork and beef mince, beaten egg, 1 crushed garlic clove, 1 tsp of the smoked paprika, the parsley and ½ tsp salt. Mix well with your hands and shape into 16 meatballs.
  • 2
Heat ½ tbsp of the oil in a large sauté pan over a medium heat. Add the meatballs and fry on all sides until evenly browned. Remove to a plate and add the remaining ½ tbsp oil to the pan.
  • 3
Fry the pepper for a couple of mins before adding the other crushed garlic clove, remaining tsp of smoked paprika, the tomato purée, chilli powder and fennel seeds if using. Stir for a minute until the spices smell fragrant then add the red wine. Turn up the heat and reduce the liquid until almost none remains.
  • 4
Lower the heat and add the beans, chopped tomatoes, sugar and vinegar. Bring to the boil, then simmer for 3 minutes before returning the meatballs to the pan and putting a lid on.
  • 5
Simmer the meatballs gently for 10 minutes until cooked through. Season to taste, sprinkle over some more chopped parsley and serve with traditional tapas sides.
